Broiled Parmesan Tomatoes

Makes 8 servings

    1/2 cup grated parmesan cheese                                 
    1/4 cup fresh chop basil                                       
    1/4 cup fine dry bread crumbs                                  
    3 slices bacon cook, crumble                                   
    8 italian plum tomatoes halve lengthwise                       
    1/2 teaspoon salt                                              
    1/2 teaspoon pepper
                                            

PREP: 10 MIN/BROIL: 8 MIN.

Combine Parmesan cheese, chopped basil, breadcrumbs, and crumbled bacon in a small bowl.

Sprinkle plum tomato halves evenly with salt and pepper, and place on a lightly greased aluminum foil-lined baking sheet. Spoon cheese mixture evenly over tomato halves.

Broil tomato halves 5 inches from heat 7 to 8 minutes or until topping is golden brown. Garnish, if desired. Serve tomatoes immediately.
