Jarlsberg Spread

    2 cups grated jarlsburg cheese                                 
    3/4 cup low fat mayonnaise                                     
    1 tablespoon minced red onions                                 
    1 tablespoon chopped fresh parsley                             
    Salt and pepper to taste 

                                      
MAKES 2 CUPS 

PREP TIME 15 MINUTES/TOTAL TIME 15 MINUTES

In a medium bowl, stir together 2 cups grated Jarlsberg cheese (about 8 ounces), 3/4 cup reduced-fat mayonnaise, 1 tablespoon minced red onion and 1 tablespoon chopped fresh parsley. Season with salt and pepper.

Garnish with more parsley, and serve with crackers, if desired.
