Matsuhisa Dressing



Martha Stewart Living

Makes 3/4 cup

    1 sm. sweet onion chop (Vidalia)                               
    5 tablespoons + 1 tsp. soy sauce                               
    1/4 cup + 2 tsp. rice vinegar                                  
    1 teaspoon sugar                                               
    1/2 teaspoon dry mustard                                       
    Salt and pepper                                                
    2 tablespoons + 2 tsp. grapeseed oil                           
    2 tablespoons + 2 tsp. toasted sesame oil
                      


Place onion in a food processor; chop finely.  Transfer to a fine sieve set over a small bowl. Cover; refrigerate overnight. In a srnaJI bowl, whisk together drained onion, soy sauce, vinegar, 4 teaspoons water, sugar, mustard, salt, and pepper. After salt has dissolved whisk in oils. Dressing can be stored in the refrigerator, in an airtight container, up to 2 days.
