Satay Dip

MAKES 1 1/2 CUPS

    2 teaspoons sesame oil                                         
    1 teaspoon olive oil                                           
    1 sm. yellow onion fine dice                                   
    2 cloves garlic minced                                         
    1 1/2 teaspoons minced ginger                                  
    1/4 teaspoon crushed red pepper flakes                         
    1/2 cup creamy peanut butter                                   
    1/4 cup pack dark brown sugar                                  
    2 tablespoons white wine vinegar                               
    2 tablespoons soy sauce                                        
    1 tablespoon ketchup                                           
    1 1/2 teaspoons lime juice 
                                    

In a small saucepan, heat sesame and olive oils over medium heat. Add onion, garlic, ginger, and red-pepper flakes, and cook, stirring frequently, until onion is soft and transparent, about 8 minutes. Whisk in peanut butter, brown sugar, vinegar, soy sauce, ketchup, and lime juice; cook 1 minute. Transfer to a bowl to cool.





Serve with chicken skewers.
